Pale yellow color with some greenish hues, a very fine perlage, well integrated with the wine due to the long refining on the yeasts. Delicate aromatic herbs, anise seeds, citrus peel on the nose, elegant and at the same time persistent on the palate, nice dry and mineral long lasting finishing. At the same time, the coveted acidity of the wine carries rich, butter-laden fare even further on the palate. It has a much drier profile though it does not lose the fruitiness and it often has notes of apple, pear, and apricot.
The innate bubbles of this sparkling wine offer an added layer of pairing versatility. This helps the wine pair well with a great variety of courses like almonds and antipasto, asparagus, Asian fare and sushi, smoked salmon, shrimp cocktails and honey-themed meals.

Four generations succeeded one another in the Orsolani family since 1894. A history over 120 years characterized by four words: SERIOUSNESS, RESPECT, WORK, TERRITORY. Tradition and personality coexist in their wines, which enclose the essence of the territory of the Canavese. The winery was founded by Giovanni Orsolani upon his return from the States at the end of the 1800's. Since then the winery has been producing 150000 bottles every year, with 90% dedicated to the Erbaluce grape, the true family love and passion.
